Tofu Fruit Smoothie

by Elaine Griswold
Tofu Fruit Smoothie we usually have at cocktail time — it staves off the hunger while we go swimming or walking before dinner (which is usually a one-pot affair).
5-8 oz. soft or silken tofu
1/2 cup frozen organic strawberries
1/2 to 1 banana
1/2 cup juice (pineapple, orange, apple)
2 ice cubes

Place all of the ingredients in the blender and blend on high for quite awhile.
This is the basic pattern that I use, but I take great liberties with it, as I do in all of my cooking! Substitute different fruit, more juice if firm tofu is used etc.
We have found that we much prefer it with the banana no matter what other fruits we use. It seems to blend very well with the tofu. Our (grown-up) kids don't eat tofu, but they request smoothies for breakfast now.
