Savory Carrot Nut Loaf

     You can make this savory loaf with soy milk if you like. Make it part of a main meal, instead of meat loaf. The tomatoes in it add lycopene, which seems to be helpful for prostate cancer.Tomato by D. Curry
1 cup smooth soy milk or water
1/4 cup nuts e.g. walnut bits
1 cup dry bread crumbs
1/2 oatmeal
2 cups grated carrots
1 1/2 cups tomatoes, chopped
1/4 cup chopped (or dried) parsley
1 teaspoon salt
1 Tablespoon green pepper, chopped

Method
Blend first 2 ingredients, then add the rest. Combine and bake at 375 F. for about 30 minutes for loaf pan or 20 minutes for muffin tins. Can bake a bit longer for mushier texture.
